Freeze drying is not a food process like any other. At a time when plant-based ingredients are too often reduced to powders, syrups or ultra-processed snacks, this cold process offers a more respectful path: preserving the fruit or vegetable as it was picked, removing only its water.

What is freeze drying?

Freeze drying is a cold preservation process that has long been used in healthcare and fine dining. The principle: remove the water from a product without ever cooking it, moving directly from a solid to a gaseous state.

A cold process in three stages

The plant is first rapidly frozen to lock in its structure. It is then placed under vacuum: the water, in the form of ice, turns directly into vapour — this is sublimation. A final desorption stage removes any remaining moisture. The result is a product that contains almost no water, yet keeps its shape, colour and aromas.

Why it isn’t simply dehydration

Texture, colour and aromas preserved

A freeze-dried raspberry keeps its shape, its deep red colour and its tartness. A beetroot cube keeps its hue. Freeze-dried fruit and freeze-dried vegetables offer a distinctive texture, both light and crunchy, which rehydrates easily on contact with a liquid or in the mouth.

Long shelf life at room temperature

By removing the water, you remove what allows micro-organisms to develop. Packaged away from air and moisture, freeze-dried products keep for several months without a cold chain : a concrete operational advantage for catering, hospitality and retail.
